Simple Microgreen Recipes
Microgreens are versatile and delicious, bringing pops of fresh flavor to your favorite recipes. They’re packed full of nutrients and are a welcome addition just about anywhere you’d use regular greens. Need some inspiration? Take a look at some of our favorite recipes.
Spicy Sunflower SALAD with Carrot Dressing

Ingredients
1/2 cup sunflower seeds
1/2 large orange or yellow bell pepper
6 ounces sunflower sprouts (1 1/2 qts. lightly packed) or 5 oz. mixed baby lettuces (2 qts.)
1 1/2 cups lightly packed pea shoots or micro greens
1 1/2 cups lightly packed mild or spicy sprouts such as clover or radish
1/3 cup long, fine shreds of carrot, preferably shredded with a mandoline
Dressing
1 pt. fresh carrot juice
3 tablespoons fresh lime juice
1 teaspoon Sriracha (Asian chili sauce) or 1/4 tsp. cayenne
1 teaspoon Asian (toasted) sesame oil
1/4 teaspoon kosher salt
Directions
Whisk together all ingredients for the dressing. In a large bowl, combine the vegetables and microgreens and stir in the dressing. Top with sunflower seeds.
Salsa with microgreen cilantro
Ingredients
10.5 oz of cherry tomatoes (our personal favorite)
Cilantro microgreens
Half of a medium white onion, chopped
1 Jalapeño (maybe less if it is a hot one), seeded and finely chopped
Garlic salt + pepper, to taste
Directions
Place all ingredients in a food processor and give it a spin. Transfer the mixture to a serving bowl and mix in the desired amount of cilantro microgreens.
Add salt & pepper to taste and serve with your favorite tortilla chips!
Watermelon and Arugula microgreen salad
Ingredients
Cubed cut watermelon
Crumbled feta cheese
Roasted pepita seeds
Arugula microgreens
Dressing
1 tablespoon grapeseed oil
1 tablespoon honey
Half of a lime, juiced
Salt + pepper, to taste
Directions
Whisk together all ingredients for the dressing and combine with watermelon and arugula microgreens. Top with pepita seeds and crumbled feta cheese.
